BIG news!!!







Hello, everyone! I hope you are all doing well.

Writing this post is a bit bittersweet. Dan, the wonderful person he is, has always supported my interest in and efforts toward blogging. He recently (and so generously) has set me up with my own domain for Beagle & Bear and installed Wordpress on it, resulting in a new and improved Beagle & Bear. From now on, I will be posting from the new site. While I am so excited for the opportunities and possibilities that the new site and its platform provides, I am a little sad to be leaving Beagle & Bear's Blogger site, where I began my blogging journey, learned a lot, had fun, and got to connect with all of you! I sincerely hope you enjoy the work I do here at Beagle & Bear, and that you will follow me to the new site and love what is there even more. Thank you all for your continued support and love - I'm grateful for each and every one of you! Can't wait to talk to you all soon : )

my life: meet josie



I am lucky to be engaged to a man who has an amazing family, and I love seeing great things happen for them. His parents recently adopted a 4-year-old beagle-mix named Josie. This event was especially exciting because (a) it's exciting when anyone gains a furry family member, (b) this furry family member happens to be a dog whose part beagle, and (c) it's the first time Dan's mom has ever had a dog! I got to meet Josie a couple weeks ago, and she is ADORABLE. Her and Madison are already fast friends.

my life: happy birthday daniel






Today is my fiance Dan's birthday! I am so lucky, blessed, and grateful that I not only have him in my life, but that I get to marry him! : ) Dan is from Columbus, OH, and we met in college as members of the same teaching program. We worked together as peer facilitators for that program, shared a group of mutual friends, and took the same classes due to having the same major (social studies education). Over time, we became close friends, then best friends, then boyfriend and girlfriend. This past fall, we got engaged and have since began planning a summer 2013 wedding. I am so proud of all Dan does and who he is, and hope he has the best year yet! In celebration of his day and our shared love of history, here's a list of other great things that happened on March 1st. Happy Birthday, Daniel! I love you! : )

Plot Summary: In 1988, Adam Carlson (John Krasinski) was on assignment in Barrow, Alaska as part of his "Adam Around Alaska" series for his Anchorage news station. Shortly before Adam was ready to depart, he and his young native Alaskan friend, Nathan, discovered three gray whales - a mom, dad, and baby - trapped in the ice. Adam's ex-girlfriend Rachel (Drew Barrymore), who also happens to be a major Greenpeace activist, immediately begins campaigning for serious rescue efforts. Her cause is helped when NBC picks up the story and airs it nationally. Suddenly, the country is experiencing whale fever. The U.S. government, major oil companies, Barrow locals, and reporters and volunteers from across the U.S. band together to rescue the whales. The movie is based on a true story.

Personal Thoughts: I loved this movie! To be fair, I had a feeling I would going into it as I (a) love John Krasinski, Drew Barrymore, Kristin Bell and Ted Danson, (b) the film takes place in Alaska, a major place on my "To Visit" list, (c) the movie is all about animals, and (d) the film is based on a true story and even features excellent Cold War tension and cheesiness. All that being said, the movie did not disappoint. John Krasinksi and Drew Barrymore had a wonderful chemistry and did excellently in roles that fit them well. Ted Danson was deliciously evil yet human as an oil baron, as was Kristin Bell as an aspiring journalist. All of the greater supporting roles, such as James LeGros and Rob Riggle as helpful inventors, were well-done and enjoyable. The story itself was compelling and poignant. A big softie, I didn't even wear masacra to the theater (despite the fact that I wanted to look cute since it was a date with Dan) because I knew I would cry at some point- which I of course did. The movie definitely ended on a positive note, though, along with some fun credits that included information about what happened to the main players in the rescue once it was completed. Overall, the movie was touching, funny, and interesting, and I highly recommend it.

design dreams: red, black, and turquoise


I saw these plates at Target a few weeks ago and thought, "How nice! Cute and affordable plates decked out in chevron!" Dan got me for our three year anniversary last week, and I realized the other reason I adore them: the colors. Ever since that realization, I can't stop thinking about using red, black, and turquoise together someday in my future apartment or home. I would love to use paint colors like these...







...to put my own style on rooms like these.




This room by Roberts Erickson Design is gorgeous! It's a bit more luxe than I can see actually being in my house, but boy does it provide some inspiration.






What would be more my style, and just as eye-pleasing, is the above bedroom makeover by Angry Julie Monday: bright, bold, and modern, yet also comfy and relaxing.

watch it: red tails


A couple weekends ago Dan came up from Columbus to visit. We love history (we both earned degrees in social studies education), and thought the new movie Red Tails looked interesting, despite its possible cheesiness, so we went to the theaters to see it.

Plot Summary:
While the Tuskegee program in the military allowed African-Americans the opportunity to be trained as pilots and take part in the U.S.A.'s WWII efforts, it did not initially allow them to participate in missions that put them in direct action against the enemy. Red Tails tells the story of these talented men and how they fought both the Axis powers and segregation within the U.S. military while stationed in Europe.

Personal Thoughts (WITH SPOILERS):
I went into the movie knowing there would be cheesy parts based on what I saw in its trailer. I did not mind most of the cheesy parts of the movie. In fact, what could have been the cheesiest parts of the movie were not cheesy at all because of the amazing acting ability of Cuba Gooding, Jr., and Terrence Howard (Gooding, Jr., plays Major Emanuelle Stance, who leads the Red Tails, and Howard plays his commanding officer, Colonel A.J. Bullard). The parts I had the major issues with were the very beginning and the very end of the movie. The beginning of the movie made me cringe. It was poorly done, feeling like an awkward simulation rather than the opening of a story. The ending was just plain terrible. As far as I know, while this movie is inspired by true events, it is not actually based on any real individuals (please correct me if I am wrong!). That being said, I do not understand why the writers of the movie chose to conclude the story the way they did. Killing off the pretty much the only likable character not played by Terrence Howard or Cuba Gooding, Jr., or at least the only other character they clearly wanted you to cheer for, and then abruptly ending the film was like someone unexpectedly splashed my face with cold water. I think I actually turned to Dan in the theater and said, "What the hell?!" I did not feel that was a unnecessary turn of events for the story or the way to let it end. It pretty much ruined the movie for me. All that being said, I would not recommend seeing this movie in theaters. I wouldn't pay for a rental to watch it again, either (although if I had never seen it and had only paid $2 at Redbox to see it I wouldn't have been mad). I might settle in to give it a second chance if I ever happen to come across it on TV.

new year's all year 2012: january reflections and february goals






Hello, everyone! Has your February gotten off to a good start? So far, mine is going pretty well!

Last month I introduced the 2012 New Year's, All Year Challenge, in which I made broad "endpoints" goals for the year and explained that each month I will make specific small goals that are stepping stones to my endpoint aims. Each month I will also reflect on the previous month's goals and efforts.


My January goals were as follows:
  • Health: track food daily; workout three times a week
  • Finances: save specific percentage of all paychecks
  • Relationships: e-mail out-of-town friends; prepare for Dan and I's three year anniversary
  • Wedding: research vendors in the two locations where Dan and I are interested in holding our wedding
  • Career: prepare for the end of swim season and substitute frequently
  • Self-enrichment: blog much more often

Reflections on January:
I feel as though I did pretty well with these goals! I have been using SparkPeople to track my food, although I have not been disciplined enough in tracking daily (probably only around 3-4 days a week). Tracking my food helped me realize my daily breakfast was too small, and increasing its size helped me stay full longer and eat healthier throughout the day. I did not workout as often as I liked due to my busy schedule with subbing and coaching, but I did get to Zumba classes more than I did in December and greatly enjoyed myself. My finances are doing decently, my relationships are healthy, I've been blogging more often than I had in past months, and I have been working hard at coaching and subbing. The most exciting achievement in January was wedding-related: Dan and I decided where we will be having our wedding! We were debating between Bowling Green (where we went to school and met) and Cleveland (my hometown). We will be getting married in Cleveland! : )


My goals for February are:
  • Health: track food daily; do yoga at least once a week
  • Finances: save specific percentage of each paycheck; open separate wedding fund account
  • Relationships: cook dinner for Grandma; plan presents and cards for birthdays in March
  • Wedding: set a date for engagement photos; research vendors
  • Career: sub 3-4 times a week; reflect on swim season and start prepping for swim team award night
  • Self-enrichment: Cook and bake more

things that are making me happy

  • Nights spent simply chatting with hilarious and supportive friends
  • Curling up with my Kindle and a big cup of tea
  • Going to pick up my wedding dress, trying it on, and having to order the next size down instead : )
  • Delicious meals at my favorite local restaurants (like here and here)
  • Awesome performances by my swimmers at an invitational meet this past Saturday
  • A new pair of gray boots and a gray and white jacket from my fiancé

  • Breaks in the crazy winter weather that make it easier to walk the dogs

my life: a present from grandma




My maternal grandma is my personal hero. She grew up in southern Arizona as the only girl in her family, began nursing school, met my Air Force captain grandpa at a dance, then eloped with him despite the fact that doing so would mean being kicked out of school. She moved to Cleveland (where, post-WWII, my grandpa worked in his family's business), began a home with my grandpa, and raised 12 kids - 9 girls, 3 boys. Then she went back to nursing school, completed the education she'd always planned on getting, and worked as - what else? - a maternity ward nurse. At 88, she is now grandmother and great-grandmother to over 80 grandkids and great-grandkids, and is the wisest, kindest, and sweetest person I've ever met.

My siblings and I were visiting her last week when my aunt was making chicken a la king. My aunt couldn't find the recipe in my grandma's recipe box, so my sister called my house and got the recipe. My grandma insisted the recipe being used was not the right one, and went searching for her Betty Crocker's Good and Easy Cookbook (1978 edition). I helped her find the cookbook and sat with her while she found the recipe. My grandma kept pointing out good recipes, tips and skills featured in the book. She mentioned multiple times that the cookbook was full of "good and easy recipes to make when you are first married and working a lot." Once she found the chicken a la king recipe in the cookbook and made sure it was the recipe she had in mind, she turned to me and said, "Here, you can keep this book if you want to." I was very excited and touched that my grandma was giving me a cookbook she greatly liked with the intention of helping me build a strong home with my future husband. I cannot wait to start trying out the recipes in it! The first one I'm going to try? Chicken a la king, of course : )

new year's all year challenge (new and improved 2012 edition)


Hello, everyone! I hope you had a great holiday season - I sure did! I spent plenty of time with family and friends, decorated my heart out, watched plenty of Christmas movies and specials, and constantly sang and danced to my favorite holiday music.

If you are a longtime reader of this blog, you may remember last year I began a challenge called New Year's, All Year. You may also remember, after a crazy first half of the year, I ended up scaling back my challenge.

I'm the type of person who is always making goals. This year I also want to the be person who is always achieving them. I'm not making a ton of super specific goals in a year-long format and then pulling them back throughout the year due to unexpected challenges. Instead, I'm approaching this year step by step.

First, I recognized the major areas of my life: health, finances, relationships, career, wedding planning, and self-enrichment. Second, I made "endpoint" goals for each of these areas - basically, how I would like to end the year in regards to each area. From there, at the beginning of every month, I will make one or two goals in each area that, when reached, will bring me closer to my endpoint goals. Since I am making these monthly goals throughout the year, I will be able to take into account any new obstacles and then set realistic, measurable objectives (while I will always write out my objectives in a detailed manner, I may not always share all the specifics on this blog, for privacy reasons). The one aspect of last year's New Year's, All Year Challenge that I would like to keep is sharing my journey with YOU!






My 2012 endpoint goals are:
  • Health: live an overall healthier lifestyle
  • Finances: be more organized, balanced, and responsible
  • Relationships: maintain mutually supportive relationships that are in balance with one another
  • Wedding: have location and date set and all major vendors booked
  • Career: aggressively pursue full-time teaching position; develop my coaching skills and knowledge while also developing the school's swimming program further
  • Self-enrichment: allow "me" time without overindulging; actively participate in passions, hobbies, interests, etc. further
My January goals are:
  • Health: track food daily; workout three times a week
  • Finances: save specific percentage of all paychecks
  • Relationships: e-mail out-of-town friends; prepare for Dan and I's three year anniversary
  • Wedding: research vendors in the two locations where Dan and I are interested in holding our wedding
  • Career: prepare for the end of swim season and substitute frequently
  • Self-enrichment: blog much more often

I feel like in 2011, among all the fun, love, and laughter, and despite the stress, self-doubt, and hardships, I learned a great deal about living life in a balanced and positive way. I am very excited to put those lessons to use this year, and to share my experiences with you. things that are making me happy (and grateful!)





  • Celebrating Thanksgiving with my family, and all that celebration entails
  • Favorite Thanksgiving foods like cranberry slices from the can, mashed potatoes, gravy, biscuits, green beans, sweet potato casserole, strawberry pretzel jello, pumpkin pie (pictured above), sugar cookies shaped like turkey, and, of course, actual turkey!
  • Helping my dad put up our outdoor Christmas lights
  • Walks with my dogs during which they run through fallen leaves
  • Baking mini-muffins and cookies
  • Watching the high school swim team I coach grow closer as a group and improve athletically as we prepare for our first meet!
  • Discovering where Zumba classes are offered in my area
  • Exploring all the gift guides my favorite sites and blogs are publishing (a round-up will be coming soon!)
  • Waking up to sweet voicemails from Daniel
  • The weather being cool enough to dress in layers, scarves, and boots, but not snowy and cold enough to be an everyday challenge
  • Getting sucked into ridiculous movies my dad finds on the broadcast TV's digital sub-channels
  • Drinking big cups of tea and coffee (homemade or Starbucks holiday drinks) while curling up with a big blanket and a good book (like this one)

Have you heard of Spotify? Dan's dad introduced me to it. It's an awesome new Internet-based music application that is basically Pandora meets iTunes. You can listen to radio stations, subscribe to playlists created by other users, browse new music and top hits, or search Spotify's catalogue for a specific artist/band, song, or album. While not all artists or bands put all or even some of their music on Spotify, TONS do and most of them allow their albums to be played in their entirety. Once you've found the music you were looking for, you can listen to it, "star" it, and/or add it to a playlist you're creating. The Spotify application includes a library component, where you can store music you've imported (from other places like iTunes), bought, starred, and/or added to a playlist.

Something that is particularly neat about Spotify is how you can use it to share music with other people. Each song or playlist featured on Spotify is given a link, which can be sent to friends via a variety of mediums. Also, if you link Spotify to your Facebook account, the application will show you all your Facebook friends who also have Spotify and what they are listening to. You can also send them tracks or playlists by dragging and dropping them on the friend's name. The music will then appear in your friend's Spotify inbox (another component of the application) for your friend to discover the next time he/she is using Spotify.







While I haven't used the radio option on Spotify that much, I love searching for artists and listening to whole albums. Once I'm listening to an album, I can search related artists, play the artist radio to find similar music to listen to, or read the artist biography. I also really enjoy creating playlists and subscribing to playlists advertised on the brief commercials or that friends are listening to. Right now I'm loving my subscriptions to '80s Smash Hits!, Country Music Awards, Top of the Charts, and The Ultimate Holiday Playlist (as shown in the image above).


I highly recommend trying Spotify. I absolutely love it! (Note: I have the basic, free Spotify application which I use on my Mac. For information on Spotify Premium, click here. For information on Spotify Mobile, click here).

thing i've been meaning to blog about, use it edition: amazon kindle

After I started a job in Columbus, life got very hectic and I took an unplanned break from this blog. Since leaving that job and moving again, I've returned and recommitted to regularly blogging at Beagle & Bear. Part of that returns includes a blog series called "Things I've Been Meaning to Blog About," which is made up of posts I intended to publish in summer or early fall but haven't yet. This post is part of that series.

This past summer, at the recommendations of my fiancé Daniel, my friend Elizabeth, and my 88-year-old grandmother, I purchased an Amazon Kindle. I stalled on getting an e-reader for awhile for a few reasons: I like to read in the bathtub, I didn't want to continuously have to buy books in order to read them, I didn't want to contribute to the world of books dying out, etc., etc. However, after really thinking about it, I knocked out those excuses pretty quickly - I mostly read magazines in the bathtub. Public libraries are starting to lend e-books, books can be borrowed from other Kindle users, and Amazon has its own lending library. I could still buy new hard copy books by favorite authors or other interesting books from used bookstores. Etc., etc.

So after meticulously Googling information about Nooks vs. Kindles, I went to Target and got myself a Kindle (specifically, a Kindle Keyboard with Special Offers). I absolutely adore it!
  • It can hold SO MANY BOOKS.
  • It uses e-ink technology, so there is no sleep-interfering blue light like there is on a computer, phone, iPad, etc.
  • It's super light to hold. Not the biggest benefit for younger people (unless you have weaker wrists), but huge for older people like my grandma or people who read often and for long periods of time.
  • You can make the words bigger or smaller (this was big for me, as I technically need glasses to read).
  • Amazon has "Kindle Daily Deals" of the day, in which you can get a book for around $1.99 (give or take a dollar, depending on the book). I enjoy discovering new books and authors this way, and don't feel guilty about purchasing one every now and then!
  • I was really interested and excited by the concept of Kindle Singles
  • I have an account with Amazon that I use often. Connecting my e-reader to an already existing account rather than having yet another account at another website was appealing and is helpful.
  • I can lay on my side in bed reading without having to move at all except for the side of my thumb that presses the forward page button. So useful in fighting my insomnia and helping me relax/fall asleep easier!
  • There are tons of super cute Kindle cases you can buy and use! I love the Vera Bradley one that Dan got for me! (it's pictured above along with my Kindle)
If you are a book lover, I would highly recommend a Kindle (especially the keyboard edition!). It's not going to replace hard copy books in your life or make you go broke. It's just going to make your packing for trips lighter and your reading-before-bed routine sweeter.

weekend wrap-up


Friday: Dan came up to Cleveland for a visit. We went to Crocker Park, where we ate at The Cheesecake Factory and went shopping at The Gap. That evening we grabbed some Starbucks and watched reruns of Saturday Night Live via Netflix.
Saturday: Dan and I picked up donuts from our favorite local shop and pretend house-hunted around my city before he had to leave for Columbus. That afternoon I attended my dear friend Ashley's baby shower (she's expecting a little girl!). In the evening, I saw my sister Jackie star in the lead role of a new play named Pray for the Missing Girls, which was showing at Cuyahoga Community College's west campus.
Sunday: After my mom and I went to church together, I spent the rest of the day at home, doing various chores and relaxing. The relaxing portion of the day included reading Mindy Kaling's new book, which I thoroughly enjoyed. The weekend finished up with a cute Skype and ice cream date with Dan.










(Okay, full disclosure: that photo of the cheesecake is actually a pumpkin pie cheesecake from Olive Garden when I went to lunch with my sister a couple weeks ago. I forgot to take a photo of the cheesecake Dan and I shared at The Cheesecake Factory, which was chocolate chip cookie dough. Can you tell I really like cheesecake?)

things i've been meaning to blog about, cook it edition: baked salmon


After I started a job in Columbus, life got very hectic and I took an unplanned break from this blog. Since leaving that job and moving again, I've returned and recommitted regularly blogging at Beagle & Bear. Part of that returns includes a blog series called "Things I've Been Meaning to Blog About," which is made up of posts I intended to publish in summer or early fall but haven't yet. This post is part of that series.








One of my presents upon graduation this past May was a Barnes & Noble gift card. I used it to buy the cookbook I am reading in the photo above: 100 Recipes Every Woman Should Know: Engagement Chicken and 99 Other Dishes to Get You Everything You Want in Life by Cindi Leive and the editors of Glamour.

I adore this cookbook. It has the readability and fun of an issue of Glamour, and the recipes are relatively uncomplicated and delicious. The star recipe in the cookbook is a meal called Engagement Chicken, which is accompanied by an explanation, stories, and a Hall of Fame list. In addition to an introduction and the Engagement Chicken story, the recipes are categorized into the following chapters: Breakfast and Brunch, Nibbles, Drinks, Soups and Salads, Meat and Poultry, Seafood, Pizza and Pasta, Meat-Free Mains, Sides, Cheap and Easy Meals, Sweets, and Menus. All the recipes have cute and cheeky names, such as He Stayed Over Omelets, Forget the Mistake You Made At Work Margarita, Get Him to Clean the Apartment Burgers, Instant Happiness Mac and Cheese, BFF Birthday Cake, etc. Each recipe is rated on a scale of one to three high heels, printed in pink and black, and is preceded by a short story explaining the background of and/or use for the recipe.

I made my first recipe from the book late this summer. Together Dan and I made Bikini Season Baked Salmon, although we slightly altered the ingredient list for our purposes. It was easy to make, tasted wonderful, and left us feeling satisfied and healthy.




Bikini Season Baked Salmon, adapted from Glamour magazine's 100 Recipes Every Woman Should Know
Ingredients
Four-ounce skin-on salmon fillets
Sea salt and fresh ground pepper
Lemon salt
3 tablespoons olive oil
1/2 cup dry white wine
1/2 cup lemon juice

Instructions
1. Preheat the oven to 400 degrees F. Put the salmon skin-side down in a ceramic or glass baking pan. Rub the salmon fillets with 1 tablespoon olive oil and season generously with sea salt, lemon salt, and pepper. Let the salmon sit in the pan for 10 minutes.




2. Drizzle the white wine over the salmon. Put the pan in the oven and cook for 15 to 20 minutes, or until the salmon fillets are opaque.



3. Meanwhile, in a small bowl, mix the lemon juice and 2 tablespoons olive oil. Top each salmon fillet with the lemon juice mixture and serve immediately.
